Greek Cookery assumes a fundamental feeling for food. The cook feels secure in working with familiar ingredients, always aware of their meaning as part of the culture. And the cook thoroughly enjoys serving others who will share in the joy of eating the favored foods. The feeling for the food begins even before the preparation of a meal.
Most Greek people, whether in villages or cities or towns, manage to keep chicken for eggs, and a goat, sheep, or cow for milk and cheese; or the get these products from a neighbor in their community. As growing things ripen, the cook tests their color, texture, aroma. Particular care is lavished on the preservation of cheeses, wines, and other foods stored for the year's use.
Fruits may be preserved in syrup or dried, vegetables pickled, olives marinated, herbs and legumes dried, fish salted, pork smoked, eggs and milk transformed into trahana and hilopites (noodles). By the time an ingredient is slated for a particular day's menu, the cook probably has seen, touched, and heard it, and has enjoyed its scent many times.
